Hakuba teaches you mochi and futomaki at Cheval Blanc Paris
For three days, the counter at Hakuba (two Michelin stars) opens to the public: tea ritual, hand-rolled futomaki, mochi. Free, ages 12 and up, booking required.

For LVMH's Journées Particulières (the group's open-house days), Hakuba, the two-Michelin-star Japanese restaurant at Cheval Blanc Paris, lets the public sit at its counter. Three workshops: the tea ritual, futomaki (thick sushi rolls) and mochi (soft rice cakes).
You roll, slice and shape next to the chefs, inside La Samaritaine, facing the Pont-Neuf. Dark wood, low light, gestures precise to the millimetre. The house pairs French seasonal produce with Japanese technique.
It's free, from age 12 (under-18s must come with an adult). Booking opened on Wednesday 30 September at 2pm on the Journées Particulières website, and slots tend to go within minutes.
It's on 16–18 October at 8 quai du Louvre, by Metro Pont Neuf or Louvre-Rivoli. Note that the venue isn't wheelchair accessible. If you missed the opening, keep an eye on the site.
