During Paris Fashion Week, Guerlain is lending the apartment upstairs in its flagship at 68 avenue des Champs-Élysées to Moïse Sfez. In the Marais, the owner of Maurice Sfez Café is better known for his Liège waffles and his egg-and-cheese to go.
The excuse is L'Heure Bleue, a perfume from 1912 that Delphine Jelk reworked this year. The menu turns it into flavours: an L'Heure Bleue smoothie, a Bleu Céleste matcha served in a can, a Freddo Espresso Extrait Vanille.
On the plate, an amber vanilla waffle under a blue cloud of whipped cream, and a honey butter toast, a nod to the bee, the house emblem since 1853. The interior is by Peter Marino.
Walking in is free; there's a menu of drinks and snacks, prices not announced. It's open 11am–8pm Monday to Saturday and noon–8pm on Sunday, by Metro Franklin D. Roosevelt or George V. You have until Sunday 4 October to climb the stairs.
