Cova is the pâtisserie that opened in Milan in 1817. Its Paris shop, at 1 rue du Pont-Neuf, is opening up its pastry kitchen for LVMH's Journées Particulières, the days when the luxury group's houses open their doors to the public.

Alongside one or more of the house's pastry chefs, you follow a creation from start to finish: choosing the ingredients, working the dough, decorating, the final touch. Cocoa, vanilla, candied fruit, Italian flours: the house motto is ingredients first.

You see up close how a creation you'd usually only glimpse in the shop window is born, decorated and finished. It's free, but places are limited and booked through the Journées Particulières website, which opened on Thursday 24 September. By 27 September, it was full.

Get there by Metro, to Pont Neuf or Châtelet. The masterclasses run from Friday 16 to Sunday 18 October.
